Bison is what most American beef was a century ago: lean, gamey, grass-fed by default. Northstar's herd is 100% grass-fed and grass-finished, and the burgers cook in a third of the time of a beef patty. Don't overcook them — a hard medium-rare or you'll lose the magic.
